The possibilities of reducing food waste
Join Helen Burnet MP, Tasmanian Greens spokesperson for Waste in conversation with Peter Bignall (Belgrove Distillery), Sam Bray (Sonny) and Greens Councillor Molly Kendall in conversation.
Peter Bignell is recognised as one of the world's greenest distillers, having built the award-winning Belgrove Distillery at his farm in Kempton running on re-purposed cooking oil and growing his own barley.
Sam Bray recently travelled to Europe on a scholarship from the Tasmanian Hospitality Association to learn first hand how the world's leading restaurants are benefiting from reducing their waste in innovative ways. He has been a chef at MONA and at some of the world's finest restaurants.
Molly Kendall works with The Co-op Federation, supporting co-operatives and community-led businesses to build less extractive, more sustainable ways of working. As a councillor at Glenorchy City Council, Molly sees a big role for councils in helping both residents and businesses shift their habits around waste.
Molly is also involved in grassroots initiatives like ‘Transition Streets’ groups which support neighbours to cut waste, share resources and take climate action together. She reckons real change comes when community energy and local leadership work together.
From shared commercial composting to wash-to-waste-free infrastructure, from ‘bin fairies’ to second-hand incentives, there are plenty of ways to support a local circular economy.
